First time back in the kitchen since the little man arrived. I was gonna sear this on the green egg but I did a bad job of storing my lumpwood recently and found it waterlogged in the garden.

So opted for sous vide and smoke gun. @BergkampsLoveChild @Mondo

Best way to do steak imo.
I use mine all the time, confit carrots using it the lot.

Going to a Jamaican place for dinner on Saturday, never had it before as it’s the only one i in NZ. @RockyMaivia @Truth_hurts any suggestions for what I should have/look for?

Oh, where to start?! I’d suggest going three or four times first of all, my friend!

For the main, I’d suggest having Curry goat/mutton and white rice with a side of veg (probably steamed veg) as your main. The food is flavoursome without being overly spicy.

Jerk chicken is good, but it can be a little dry and if it’s not being cooked on a barbecue over pimento wood, you aren’t getting the full experience.

Bro the thing that sucks is it’s closing down soon. Only way I found out about it is because I saw an article about it closing down. Fingers crossed we can get at least another dinner in after Saturday night.

Okay I was writing a reply but I realised I might end up putting you off. I’ll give you the option of going first before hearing what I have to say lol.

I’ll say this though:

My god those prices are expensive. This is why I cook at home.

Making my first ever visit to Brighton to see War of the Worlds on Saturday, but I think the highlight for me is that they have a Wimpy. Used to love going to the Plymouth branch with my dad when I was young.

These are pretty standard prices in NZ for any kind of restaurant lol obviously it’s in NZD as well so probably about half that if it’s in pounds. Everything is expensive here haha

I converted it into Pounds while saying that lol it’s a lot even with that going on.

The Jerk Chicken/Pork seems very suspect with the Nandos style spice level. I don’t think they’re using Scotch Bonnets. It’s most definitely not cooked on Pimento wood as @Truth_hurts said but it can still be nice oven baked. I also hear @Truth_hurts concern about it being dry but in Jamaica normally they drizzle hot sauce over it which combos nicely with the jerk. I think it’s worth a shot.

(I know I just critiqued a menu item to shit, but jerk isn’t jerk if it isn’t spicy so I don’t get it lol, to get the flavour of Scotch bonnets it has to be in there)

Close to zero seafood options is a big shocker (I don’t like seafood, but it’s a Jamaican staple), the Mexican choice of Quesadilla (With no Jamaican twist it seems) is a really weird option.

Lack of Jamaican options in general is odd, Breadfruit originated in Papua New Guinea, maybe it’s expensive to import?

I’d go with @Truth_hurts suggestion of Curry Goat. Other authentic Jamaican options are either Oxtail, Jerk Chicken or Jerk Pork. Ital Curry is more like a vegetarian option. Even though I moaned about the prices I have a good feeling the portions on Curry Goat and Oxtail will be big.

In terms of sides. Mac n Cheese (Please be made with cream). I don’t see White Rice but maybe that’s an option (Rice n Peas is very much you love it or you don’t. Kidney beans are just like that)

Patties are delicious but £10 for 2 Patties is an absolute scam.

Reading through all this, I just know that tonight I am deliveroo’ing in some curry goat with mac n cheese + jerk chicken and plantain. When I order from these places I have to order the lot lol.

I grew up on this staple, being from West London all my mates were Jamaican and/or Caribbean. Their mums making us rotis which we wedged into our bags before going to the park to play footy, and then coming back after curfew and getting the biggest verbal annihilation was a common occurence. Caribbean mums don’t mess about haha. Then the next time you step into their house the following week you get the warmest welcome as if nothing never happened.

Fondest childhood memories haha.
