I don’t think that is completely accurate. I use the terms fries and chips depending on the thickness. So in McDonald’s for example, I’d order “fries”, but yeah we never call crisps “potato chips”.

Chips are called chips because they are potatoes that are put in a potato chipper, hence chips
That’s only because it’s an American restaurant though. I think the french call them fried potatoes.

Meal sizes in the states are unreal, I remember when I spent 4 weeks in the US in 2013 I rarely finished my meals.
