I watched and then listened to a podcast recently by a Japanese chef and the whole chicken sashimi thing.
Don’t get me wrong, it’s fucking rank but something to do with the very strict rules surrounding the production and conditions of these special chicken make them acceptable to use for sashimi.

about 20 years ago I had a trip to Japan with my gf (now wife) and got into an old traditional Japanese restaurant (only a few tables). Later we found out that there was no English on the menu and the old servers did not know English either. It was quite impolite to just leave so we randomly ordered some dishes.
There was one dish that even after all these years we still don’t have a clue what it was.
It looked like raw chicken, but also looked like Albacore…
We hesitated but still ate it due to respect.
